Chewy Chocolate Cookies Recipe
Ingredients
- 300g all-purpose flour
- 50g dutch process cocoa powder, sifted
- 1 tsp salt
- 3⁄4 tsp baking soda
- 225g unsalted butter, at room temperature
- 200g brown sugar
- 100g granulated sugar
- 1 large egg, at room temperature
- 1 tsp vanilla bean paste or extract
Instructions
- Preheat oven to 350°F/180°C. Line baking trays with parchment paper.
- In a medium bowl, sift together the flour, cocoa, salt and baking soda.
- In a stand mixer, cream the butter and sugars until light and fluffy, 3-4 minutes. Add egg and vanilla and beat until combined.
- Mix the dry ingredients into the wet until just incorporated.
- Scoop 2 tbsp (40g) of dough at a time, roll into balls and generously coat in granulated sugar.
- Bake 11-12 minutes until puffed, cracked on top and edges are set.
- Cool on the baking tray for 15 minutes before transferring to a wire rack to cool completely.
