Ingredients

For the Chicken

  • 2 boneless skinless chicken thighs
  • 2 tablespoons chicken rub or all-purpose BBQ rub
  • 1 tablespoon olive oil

The Pimento Cheese

  • 1 cup shredded cheddar cheese
  • 2 oz jarred pimentos, drained
  • 1/2 cup mayonnaise
  • 4 oz softened cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste

For Assembling the Sandwich

  • 2 brioche buns
  • 8–10 pickled jalapeños
  • 1 cup shredded lettuce
  • 2 tablespoons honey

Instructions

  1. Prepare the Chicken:
  • Coat the chicken thighs with olive oil and season them with the chicken rub or BBQ rub.
  • Grill the chicken thighs over medium-high heat, flipping occasionally, until they reach an internal temperature of 165°F (about 6-8 minutes per side).
  1. Make the Pimento Cheese:
  • In a bowl, combine the shredded cheddar cheese, pimentos, mayonnaise, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix well until smooth and creamy.
  1. Assemble the Sandwich:
  • If desired, toast the brioche buns.
  • On the bottom half of each bun, layer shredded lettuce followed by pickled jalapeños.
  • Place one grilled chicken thigh on top of the jalapeños.
  • Add a generous scoop of pimento cheese over the chicken.
  • Drizzle with honey and top with the other half of the bun.
