Ingredients
For the Chicken
- 2 boneless skinless chicken thighs
- 2 tablespoons chicken rub or all-purpose BBQ rub
- 1 tablespoon olive oil
The Pimento Cheese
- 1 cup shredded cheddar cheese
- 2 oz jarred pimentos, drained
- 1/2 cup mayonnaise
- 4 oz softened cream cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
For Assembling the Sandwich
- 2 brioche buns
- 8–10 pickled jalapeños
- 1 cup shredded lettuce
- 2 tablespoons honey
Instructions
- Prepare the Chicken:
- Coat the chicken thighs with olive oil and season them with the chicken rub or BBQ rub.
- Grill the chicken thighs over medium-high heat, flipping occasionally, until they reach an internal temperature of 165°F (about 6-8 minutes per side).
- Make the Pimento Cheese:
- In a bowl, combine the shredded cheddar cheese, pimentos, mayonnaise, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix well until smooth and creamy.
- Assemble the Sandwich:
- If desired, toast the brioche buns.
- On the bottom half of each bun, layer shredded lettuce followed by pickled jalapeños.
- Place one grilled chicken thigh on top of the jalapeños.
- Add a generous scoop of pimento cheese over the chicken.
- Drizzle with honey and top with the other half of the bun.
