Ingredients

For the Sweet Potatoes

  • 4 medium sweet potatoes (about 1/3 lb each)
  • 1 can (15 oz) chickpeas, rinsed and drained

  • 1/2 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon smoked paprika (or regular paprika)
  • Pinch of sea salt

  • 1/4 cup hummus (or tahini)
  • 1/2 medium lemon, juiced
  • 3/4 to 1 teaspoon dried dill (or 2-3 teaspoons fresh)
  • Water or almond milk (to thin the sauce)

For the Parsley-Tomato Salad

  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Red onion (optional, diced)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and line a large baking sheet with foil.
  2. Prepare Sweet Potatoes:
  • Rinse and scrub the sweet potatoes. Cut them in half lengthwise to speed up cooking time.
  • Place them cut-side down on the baking sheet.
