Here’s a delicious recipe for Biscoff Cake, featuring layers of moist cake infused with Biscoff spread and topped with creamy Biscoff buttercream.

Ingredients

For the Cake

  • 325 g unsalted butter, softened
  • 325 g light brown soft sugar
  • 150 g Biscoff spread (smooth)
  • 6 large eggs
  • 1 tablespoon milk
  • 325 g self-raising flour

The Buttercream

  • 200 g unsalted butter, softened
  • 400 g icing sugar (powdered sugar)
  • 250 g Biscoff spread (smooth)
  • 2-3 tablespoons milk (as needed)

For Decoration

  • 35 g melted Biscoff spread
  • 8 Biscoff biscuits, broken in half
  • 3 Biscoff biscuits, crushed

Instructions

  1. Preheat the Oven:
  • Preheat your oven to 180°C (350°F). Grease and line two 8-inch round cake tins with parchment paper.
  1. Make the Cake Batter:
  • In a large mixing bowl, beat together the softened butter and light brown sugar until fluffy.
  • Add the Biscoff spread and mix until well combined.
  • Add the eggs one at a time, mixing well after each addition. Then add the milk and mix until smooth.
  • Gradually fold in the self-raising flour until fully incorporated.
  1. Bake the Cakes:
  • Divide the batter evenly between the prepared cake tins.
  • Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the tins for 10 minutes, then transfer them to a wire rack to cool completely.
  1. Prepare the Buttercream:
  • In a mixing bowl, beat together the softened butter and icing sugar until combined.
  • Add the Biscoff spread and mix until smooth. If the buttercream is too stiff, add milk as needed to reach your desired consistency.
  1. Assemble the Cake:
  • Once cooled, level off the tops of the cakes if necessary.
  • Place one cake layer on a serving plate and spread a layer of buttercream on top.
  • Add the second cake layer on top and cover the entire cake with remaining buttercream.
  1. Decorate:
  • Drizzle melted Biscoff spread over the top of the cake.
  • Decorate with broken Biscoff biscuits and sprinkle crushed biscuits on top.
