Palmiers Recipe
Palmiers, also known as elephant ears or French hearts, are delicious and crispy pastries that are easy to make. Here’s a simple recipe for these sweet treats:
Ingredients
- ¾ cup granulated sugar
- 1½ teaspoons ground cinnamon
- ⅛ teaspoon salt
- 1 package (17.3 oz) frozen puff pastry, thawed (recommended: Pepperidge Farm)
Instructions
- Prepare the Sugar Mixture: In a bowl, mix together the granulated sugar, cinnamon, and salt. Set aside.
- Prepare the Dough: On a lightly sugared surface (using some of the sugar-cinnamon mixture), unfold the puff pastry. Generously sprinkle the dough with the sugar-cinnamon mixture.
- Roll the Dough: Fold the dough edges toward the center so they meet in the middle. Sprinkle a little more sugar on the exposed surface. Then, fold each side toward the center once more to form a roll.
- Refrigerate: Wrap the roll in plastic wrap and refrigerate for about 30 minutes to firm up.
- Cut the Palmiers: Preheat the oven to 400°F (200°C). Remove the roll from the refrigerator and cut into slices about ½ inch thick.
- Bake: Place the slices on a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 12 minutes, then gently flip the palmiers with a spatula. Return to the oven for 5 to 6 minutes more, until golden brown and caramelized on both sides.
- Cool: Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Tips
- For an extra touch, you can add citrus zest or spices like nutmeg to the sugar mixture.
- Palmiers can be prepared in advance up to the slicing step and kept refrigerated until ready to bake.
