  • 4 large eggs
  • 1 (5-ounce) can of high-quality tuna, drained (or fresh seared tuna)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1 cup pitted olives (preferably Niçoise or Kalamata)
  • 2 tablespoons capers (optional)

For the Dressing:

  • 1/3 cup extra virgin olive oil
  • 1/4 cup red wine vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the Potatoes and Green Beans:
  • Place the halved potatoes in a pot of salted water and bring to a boil. Cook until tender, about 10-15 minutes.
  • In the last 3 minutes of cooking, add the green beans to the pot. Drain both and set aside to cool.
  1. Boil the Eggs:
  • In a separate pot, bring water to a boil. Gently add the eggs and boil for about 7-8 minutes for hard-boiled eggs. Remove them and place them in an ice bath to cool. Once cooled, peel and slice them in half.
  1. Prepare the Dressing:
  • In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), Dijon mustard, minced garlic, salt, and pepper until emulsified.
  1. Assemble the Salad:
  • On a large platter or individual plates, arrange the salad greens as a base.
  • Top with cooked potatoes, green beans, cherry tomatoes, cucumber slices, olives, capers (if using), and flaked tuna.
  • Finally, place the halved eggs on top.
  1. Dress the Salad:
  • Drizzle the dressing over the salad just before serving. Adjust seasoning with additional salt and pepper if needed.
  1. Serve:
  • Enjoy your Salade Niçoise as a refreshing meal on its own or with crusty bread.
